When you live in Central Valley, California, summer doesn’t just “warm up”—it scorches. By June, we’re spending most of our time in the pool rather than in the kitchen, and honestly? That’s exactly how I like it.

As a mom of three active boys home for the summer, I’m always on the lookout for meals that are fast, flavorful, and don’t require turning on the oven. After a long afternoon of swimming, I want dinner to be something we can jump out and eat—no fuss, no flames, and definitely no heating up the house.

This one you prep in the morning (boil pasta ahead of time if you're okay using the stove briefly). Then toss:

  • 3 cups cooked pasta (chilled)

  • 1/2 cup chopped artichokes

  • 1/4 cup sliced olives

  • 1/2 cup cherry tomatoes

  • 1/4 cup red onion

  • A mix of mayo + sour cream + Roasted Red Bell Pepper Mix for a creamy, savory dressing

Let it chill in the fridge until dinner and you’re set.
